From that list, I have played & enjoyed the following:
* Professor Layton - cute & addictive if you love puzzles/riddles, _excellent_ voice acting. Play this one with the volumn turned up.
* Hotel Dusk: Room 215 - Great atmosphere & art style. Captures a gritty noir-y world quite well. My only complaint was a lack of feedback on progress, as in I couldn't tell if I was doing well, except when I'd suddenly get thrown out.
Damn, I went through the rest of the list and realized I haven't played most of them in the years of owning a DS. I tend to play my games thoroughly so it takes me a while.

I have:
Castlevania Dawn of Sorrow - Another solid Castlevania game, but the formula is growing a little old. None of the portable versions have really lived up to the quality of Symphony of the Night, imo, but they've all been solid.
New Super Mario Bros - Great, great platformer. Unfortunately, I stopped playing halfway through because, well, despite it being really polished and awesome for a Mario game, it was still "just" a Mario game, not to take anything away from the quality. I just couldn't shake the feeling like I'd already played the game before.
Zelda Phantom Hourglass - Excellent Zelda game, but sort of the same issue as above. I felt like I had already played the game before (Wind Waker). Problem is in this one's case, Wind Waker was a much, much better game. The control mechanics were innovative and surprisingly usable.
Pokemon Diamond - Great game, but I lost the will to play when I found out that I couldn't level up all of my Pokemon just by battling them. I had to trade them, find ways to make them happy, etc, and I just wasn't willing to invest that sort of time and effort into it.
FF IV - Impressive graphics, but all the design changes were, well, simply horrible. Very unbalanced and the completely obtuse systems were never explained in full.
Elite Beat Agents - Excellent rhythm game that has charm in excess. Highly recommended.
Advance Wars Dual Strike - Much better than the original, finally felt like it had enough variety to make things a little more interesting. Loved it.
Sonic Rush - Was a great 2D Sonic game, but my biggest problem is that I never really felt like I was playing the game. Everything moves too fast for most of your decisions to matter, unless you're willing to play over and over again until you memorize the stages.
Puzzle Quest - Actually, I played this on PSP, not DS, but same game. Very, very good concept. Unfortunately, the balance is completely broken toward the end of the game, but was very compelling, regardless.
Professor Layton - Mostly awesome pu
