I remember playing quite a few hours of Rez, but didn't buy it as I just didn't "get it." It seemed like interactive music with the facade of a game. Am I missing something?

Well, yeah.
I dunno that there's much to "get" - it's either an experience you sort of "feel" or you don't. For me, the combination of the music and the graphics, with just enough interactivity that was timed to the music to keeps me in sort of a low-grade catatonia for the entire duration of the game.
To really do it right, you've gotta turn the lights off, crank the sound just about as loud as is reasonable, and churn through the whole game from start to finish.
